What we ate Wednesday!
This is an easy dinner that my kids love and my kids are super picky! I know by our food posts it looks like we eat everything but they're still pretty picky! This soup is great because to me its like a fancy mac and cheese! and its easy! Let me know if you want me to keep up what we ate Wednesday's until I run out of meal ideas!
Top with a CRAP TON OF PARM!!!!! and then I just add the basil for looks! I actually stir it into my soup but I don't eat it.
Tortellini Soup
2 Tbs unsalted butter
1 medium onion (diced)
2 gloves of garlic (diced)
1/2 tsp salt
1/4 pepper
2 bay leaves
1 Tbs balsamic vinegar
4 cups of chicken broth (I grab a box)
1 28 ounce can of crushed tomatoes
1/2 cup of heavy cream
1 package of frozen cheese tortellini
1/2 cup of fresh basil leaves
1 container of Parmesan cheese
Melt the butter on the stove. Add onion, garlic, salt and pepper. Once its melted down, stir in vinegar crushed tomatoes, broth, cream and bay leaves. Let it come to a boil. At that point add the pasta and let it simmer for 5-10 minutes. Make sure if you're not using frozen pasta to check it quicker than the 5-10 minutes.
